accountability

The day I gave birth to my youngest son, I was the heaviest I had ever been. Like, 235lbs. I don't know my exact weight because there was no way in hell I was getting on the scale that day... but you get the idea. HUGE.

After Dash was born in August 2010, I breastfed him and sort of watched what I ate. By the end of the year, I was at 194lbs. When I saw myself in photos from the holidays, I knew I had to take control of my weight and get serious about my health.

I started Weight Watchers in January of 2011. I was good at dieting and counting points! I could do this! By the end of 2011, I weighed in around 164lbs. I had lost 30lbs on WW! It was the best feeling and I really felt like I accomplished something.

During the summer of 2012, I realized that if I want to start losing again and get down to my goal weight, I really need to add some exercise into my life. This is where I struggle... Exercise. Ugh!

I tried the C25K program. I made it to Week 3 and then hurt my knee. I tried the 30 Day Shred. I made it to Level 3 and then quit.

My knee hurts.
We are moving.
I work full time.
The kids need me.
I don't have the time.
I'm tired.

The list of excuses goes on and on and on and on. But what it comes down to is this:

I have to make the time. I have to do this for me. No excuses.

Right now I weigh 161lbs. My goal weight is 140lbs. My fitness goal is to be able to complete the entire 30 Day Shred and the C25K program. I will get it done!

what we're eating - pulled pork

My first Pinterest find experiment on the blog! Pulled pork with only 3 ingredients. THREE!

I'm so excited.

Before we get into some crazy good pulled pork, I want to say a few things. First, I love pinterest. Second, I love finding all kinds of random stuff to pin to my boards. Third, I like to pin a lot of food... evil, sinful, delicious looking food.
After I pin things, they are forever embedded into my thoughts until I actually DO what I pinned. Sometimes, they turn out just like I had always imagined, and other times, well.... they don't turn out.
This is where I will share the good, the bad, and the ugly!

Now, back to the pulled pork.

I saw this little beauty on pinterest after I had just had the most amazing pulled pork sandwich a local BBQ place. It was a sign that I could make it at home and have it be just as delicious as the restaurant sandwich I had just eaten.

Today is a rainy, windy, horrible, nasty day. The PERFECT day for some pulled pork in the crock pot.

I gathered my ingredients and plugged in the crock pot.



I placed my 2lb pork loin in the pot and poured in some root beer. After about 3 hours, I took this photo for you.



It's looking pretty gross, but I know this is going to turn out awesome... Right!?!

After cooking for a little over 6 hours, I drained out all the juices and shredded the pork.



Then I added my bottle of BBQ sauce.




Now it's all ready to put on a sandwich. Us country folks, we like coleslaw on our pork. Don't knock it 'till you try it!




Oh. And we eat on paper plates.

I'm so classy.

Overall, this was a great dinner. Easy to throw in the crock pot, and easy to eat. Now pin this to your food board and obsess about it until you make it.

Ingredients
1 (2lb) Pork Tenderloin
1 (12oz) can of Root Beer
1 (18oz) bottle of BBQ Sauce
Buns

Directions
Put pork in slow cooker and pour root beer over it. Cover and cook on low for 6-8 hours, or until meat shreds easily with a fork. Once meat is shredded, add BBQ sauce to coat. Serve on buns with coleslaw on top.
